My well-thumbed copies of Home Cooking and More Home Cooking, collections of wonderful food essays by the late Laurie Colwin, have transported me many times into this author’s charmed vision of domestic and culinary bliss. I love reading and rereading about her idiosyncratic food loves—the perfect Thanksgiving stuffing, her passion for a well-cooked Brussels sprout, and the comfort found in a mug of homemade beef tea. Gingerbread, with its peppery sweet flavor and pungent aroma, was one of her favorites, and it was Colwin who first planted the idea in my head to combine ginger with chocolate. Her favorite birthday cake combined dark, sticky layers of gingerbread sandwiched with raspberry jam and iced thickly with chocolate frosting. In honor of Ms. Colwin and her love of all things dark and spicy, I created these easy-to-make gingerbread muffins speckled with chocolate chips—their spicy scent ready to perfume your house and feed anyone who may be hungry at three o’clock in the afternoon.
